Okay, but cows and horses die all the time, and not from someone killing them for food, so even if they were never slaughtered for food, they would still be able to make gelatin, correct? Sorry, I'm just trying to understand.

Yep, that's true. But if you've chosen not to eat meat, you still don't wanna eat gelatin. And, generally, the horses and other animals that die of natural causes are not used to make products for human consumption.
